Italian Lamb meatloaf

Recipe - Italian Lamb Meatloaf
Dinner, Serves 4.
This recipe was taken from The CSIRO Total Wellbeing Diet Book 2 by Dr Manny Noakes and Dr Peter Clifton
Ingredients
700g lean minced (ground) lamb
1 onion, finely chopped
2 cloves garlic, finely chopped
1 tablespoon dried mixed herbs
3 roma (plum) tomatos, finely diced
2 tablespoons tomato sauce (ketchup)
¼ cup flat-leaf parsley, roughly chopped
70g wholemeal breadcrumbs
2 eggs, lightly beaten
1 x 250g packet frozen spinach, defrosted
¼ cup pine nuts
Method
Preheat oven to 180 ºC.
Lightly greese a loaf tin.
In a large bowl, mix all ingredients using your hands.
Season lightly.
Press mixture into loaf tin.
Cover with foil and bake for 40 minutes.
Remove foil and bake for a further 15 minutes or until a brown crust forms.
Tilt loaf tin and drain off any excess liquid.
Allow meatloaf to stand for 10 minutes before cutting and serving.
I just pasted it above because it will disappear off the page soon. I aim to try this probably next week; seems very easy; a lot easier than the pastabake which is now easy in itself; sounds good though! :)
